Cold-pressed, the base oil in eleven of the twelve
Aley is half an hour above Beirut and about eight hundred metres up, which is why the almonds there come down late and small. We buy from four families on the same road, the same four every year, and the nuts are pressed cold within a few weeks of the harvest because oil that is pressed warm keeps less well and we do not want to be adding anything to make it keep.
It is the base oil in eleven of the twelve bottles, which is not a boast about almonds. It is the reason this is a small house: one oil, bought once a year, from people whose names we know.
The bottle is dark glass because almond oil turns in the light, and the date it was pressed is written on every one of them by hand.
